Most recipes will call for medium heat to be applied or low heat over a longer time. It’s also recommended to chop them up into bite-sized pieces to reduce cooking time as well as make it easier to eat. 

As a general rule of thumb, boiling water will cook carrots to a tender point in around 5 – 7 minutes. It will take longer if you’re using a slow cooker or a low boil with the rest of the ingredients cooking at the same time.

But the main goal is to be able to chop one in half with a fork or spoon with minimal effort. That’s how tender the carrots should be in a good soup.
